Creamy Garlic Parmesan Chicken

Ingredients

  • 4 small-medium chicken breasts or 2 large halved
  • salt and pepper to taste
  • 2 Tablespoons olive oil
  • 4-5 cloves garlic minced
  • 2 Tablespoons butter
  • 1 cup heavy cream
  • 1 tablespoons Italian seasoning or oregano (or a mix of both!)
  • 1/2 cup parmesan cheese freshly grated (not pregrated)
  • 4-5 oz sliced or chopped Crimini or baby bella mushrooms
  • 2 cups spinach chopped

Directions

  1. Season chicken with salt and pepper. Heat olive oil in a large heavy skillet or pan. Add chicken to the pan and cook for 5-6 minute per side or until the outside is golden and the chicken is almost cooked through (cooking times will vary depending on the thickness of the chicken breasts, I like to undercook at this stage so it doesn't overcook at the end).
  2. Remove chicken from the pan, reduce heat to low-medium, and add garlic; stir for 30 seconds. Add mushrooms and butter, saute until mushrooms are soft.
  3. Add the cream, Italian seasoning, and parmesan cheese. Stir to combine.
  4. Stir in spinach one handful at a time. Wilt, add more until desired amount is reached.
  5. Return chicken to the pan and simmer until chicken is done. Mix well together.

Serving Suggestions

  • Serve with pasta or veggies.
