This one for my kids:

Prep time: 5 minutes
Cook time: 1 hour
Total Time: 1 hour 5 minutes
Servings: 4

Ingredients

  • 4 medium-large russet potatoes
  • Extra-virgin olive oil
  • Sea salt

Directions

  1. Preheat the oven to 425°F
  2. Wash and dry the potatoes
  3. Use a fork to stab each potato a few times then place them in a bowl
  4. Drizzle olive oil over the potatoes and rub it in with your hands
  5. Sprikle sea salt all over the potatoes and rub that in as well
  6. Bake the potatoes for 1 hour. Internal temp should be around 210.
  7. Serve hot!

Notes

  • Serve with sour cream, bacon bits, green onions, cheese or chili.
  • Cut the potato in half, carve out the inside, fill the skin with butter and let it sit to melt while you eat the rest of the potatoes.
